Chimay - Blue Label

Chimay brewery says is principally distinguished by its character of a strong beer. This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavor, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer, re-fermented in the bottle, is not pasteurized.. I had this brew with an old friend in Jacksonville, FL. back in June of 2009. We sampled several big beers this evening all of which are on the blog site.

The ABV is 9.0 and the IBU rating is ??.  
Style - Belgian Strong Dark Ale 

Glass to use - Snifter, Tulip or Goblet.
Delivery 12oz bottle.

Can be cellared for long periods, under the proper conditions.

The Pour - Pours a nice dark brown color with a cream head that last.  Good lacing.
Aroma - Sweet with hints of brown sugar and caramel.
Taste - Malty and sweet and you can taste the alcohol.
Mouth Feel - Perfectly carbonation, full body. Nice finish.
Drinkable - Alcohol warmth in a good way.  Watch out for though, it will creep up on you.
This beer pairs very well with cheese and grilled meat.

This beer gets a Duper rating of A+.
